How was your second week on the detox? This week I felt that my healthy eating habits were more integrated into my daily routine. Choosing what to eat was more natural and less of a check-list challenge.
The biggest challenge of my week was eating healthy while staying busy. Usually, I eat on the go during my work day and this week I had more difficulty finding things to eat on the go. This leads me to...
The biggest revelation of the week: there are a lot of detox friendly food havens in Austin. To name a few places that I have dropped in on during the detox:
Juicebox/Soup Peddler - Their veggie juices are great, I ordered the Veggie Salad this week.
Lulu B's - This is a trailer on S. Lamar and Oltorf, their vermicelli (rice noodle) bowls are delicious!
Beets Cafe - Everything on the menu is raw and tasty and most of it is detox friendly.
The biggest reward of the week is that I have lost weight, about 8 pounds since I started the detox. Although my intention was not specifically to lose weight, this is a really nice reward:)
How was your week? Feel free to share part of your experience with us. We would love to hear from you!
I will leave you with a recipe for Chickpea Salad:
Chickpea Salad
Serves 4
Ingredients:
2 cups cooked chickpeas
2 cloves of garlic, minced
2 Tablespoons scallions, thinly sliced
1/2 bell pepper, diced
2 Tablespoons fresh parsley, finely chopped
1 Tablespoon olive oil
3 Tablespoons fresh lemon juice
1/4 -1/2 cup crumbled feta cheese
Instructions:
In a medium bowl, combine chickpeas, garlic, scallions, bell pepper, parsley, and feta. Toss to combine. In a separate bowl, whisk olive oil and lemon juice. Pour olive oil/lemon juice mixture over chickpeas and mix. Add freshly ground peppercorns to taste. Enjoy!
Hope yall have a great weekend!
Thanks and love,
Sandi
